Sea bass tartar, truffle caviar and truffle cream in a crispy tube



Duck foie gras brûlée, raspberry, raspberry gel and brioche



Scallops, cauliflower purée, fregola with nuts and parmesan espuma



Halibut, raviola  with prawns, baby tomatoes, fennel and basil sauce




Roasted fallow deer,

roasted mushrooms, brussels sprouts, potato purée with chestnuts and foyot sauce



Pink grapefruit and prosecco sorbet



Chocolate Manjari with sea salt,
